Schools, nurseries, hospitals, care homes and public authority canteens regularly re-tender their catering, usually as a framework agreement over several years and in lots by site. For regional caterers, lots are the direct route to reliable, long-term contracts.
Canteen and catering services count as social and other specific services under Section 130 of the Act against Restraints of Competition (GWB). A higher EU threshold and a more flexible procedure apply to them, so many contracts are tendered nationally.
Alongside price, contracting authorities often weight menu quality, organic share, regional sourcing and sometimes a tasting. For schools and nurseries, many tenders refer to the quality standards of the German Nutrition Society (DGE). Anyone who addresses these criteria specifically gains a clear advantage.
How large the communal catering market is, who supplies it and which contracts are being re-awarded is shown in our study on the Market studies page.
A convincing catering concept, a hygiene concept under HACCP, required certificates such as organic, a transparent calculation per meal and comparable references.
